About / why BUI exists

Why we cook the way we do.

Bottom Up Iron is about cooking good food and explaining the parts of a recipe that usually get skipped: the heat, the timing, and what to look for.

The idea

A recipe should tell you what to look for.

A recipe tells you what to do. A useful recipe also tells you what to look for: how the crust should brown, when to lower the heat, and why one step changes the result.

That's the thinking behind BUI. The recipes begin as food cooked in a real, compact home kitchen, using ordinary burners and pans. We record what worked, including the heat, pan size, timing and signs of doneness, so the dish can be made again.

What you'll find

What you’ll find here.

Recipes are the heart of the site. Lab Notes covers cast-iron care, heat management, surface finishes and other questions that come up while cooking. Lab Equipment collects useful product references with plain-language explanations.

Whenever a method has been documented in the BUI kitchen, we'll say so. Research-based advice and manufacturer claims will be identified for what they are.

What's next

Where we go from here.

Over time, the recipe collection can develop into books and deeper equipment coverage. Independent cookware testing and BUI Certified are future ambitions, not existing endorsements or certifications.

For now, the work is simple: cook, document, explain, and keep making the library more useful.
